Burrito Bowl with kidney beans & Hummus

Wholesome nutritious one dish meal which takes less than 1 minutes to be prepared. Perfect meal for days when you don't feel like cooking..!



Serves - 4


Ingredients


Roti / tortilla - 4 no

Julienne Carrots - 1 cup

Julienne Capsicum - 1 cup

Julienne Cabbage - 1 cup

Tomatoes Quarter sliced - 1 cup

Sautéed Mushroom- 1/2 cup

Salsa - 1/4th cup

Hummus - 1/2 cup

Rajma moong / Kidney bean & Sprouts Sautee - 1 cup

Method


  1. Toast the roti on the plan till golden brown from each side, and break it into pieces

  2. In a bowl start adding the veggies one by one.

  3. Add the kidney bean and sprouts mixture followed by hummus.

  4. Top it up with salsa coriander & Toasted Roti.


Note you can add Cottage cheese / Tofu / Chicken instead of Kidney bean mixture
