Carrot Oats Pancake

Serves : 2
Ingredients
1 cup of Oats Powder [ Just grind the oats finely ]
1/2 cup of Whole Wheat Flour
1/2 tsp of Baking Powder
1 Egg [ Optional ] use 1/2 tsp of baking soda instead
1 tsp of Vanilla essence
3/4th cup of Pomegranate juice / Milk
1 cup of Grated carrots [ squeeze the water out ]
2-3 tbsps of organic honey
1 tsp of butter
1/2 tsp oil
Method
1. In a bowl add the oats powder along with the wholewheat flour and baking powder, mix it well
2. Add egg and bring the mixture together then add vanilla essence and pomegranate juice
3. Mix the mixture well.
4. Add honey and grated carrot in the mixture and bring the mixture together in a cut and fold method.
5. Heat Pan add 1 tsp of butter along with 1/2 tsp of oil, with a help of a big paddle or spoon, add roughly pour 1-2 tbsps measuring of mixture over the pan and cook it on medium heat till you can see bubble being formed on the pancake, flip and cook the other side for 3-5 min. Follow the same process for rest of the pancakes.
6. The size of the pancakes is absolutely your call, I make them small simply because my kids like it small in size.
7. Finally drizzle it with some organic honey while eating.
They turn out to be super yum & super healthy
