Cilantro Hummus

Serves 3-4


Ingredients

Boiled Chickpeas - 1 cup

Coriander / cilantro chopped - 1 cup

Yogurt - 1/4th cup [ Optional ]

Lemon juice - 1 tbsp

Salt - pinch to taste

Garlic - 1-2 Cloves

Cashews Soaked - 3-5 no



Method


  1. In a processor / mixer add boiled chickpeas with cashew, garlic and coriander and blend it till smooth

  2. Then add yogurt, lemon juice salt and again give it a final blitz..

  3. Adjust the consistency as per your liking


You can easily freeze the the hummus for a week in an airtight container and can use it as a spread or dressing as well.


I have used it in burrito or on Pizza as a spread...!
