Mango Mousse [ Vegan ]



Serves : 2-4

Ingredients


3/4th cup of Mango puree

3/4th cup of Aquafaba [ chickpea water ]

1/2 tsp of cardamom powder

1-2 Tbsps of chopped nuts for garnishing

Few Mango pcs for garnishing







Method

To prepare aquafaba [ at home]

  1. Soak 1 cup of chickpea overnight , then drain the water out and in a pressure cooker add the chickpea along with 1 cup of water.

  2. Cook it till the chickpea are soft .

  3. Now the water we used to cook chickpea is called aquafaba

  4. So drain this water in a container or vessel and you can use the chickpea the way you want to.

  5. Now this aquafaba needs to be reduced in volume as we need a consistency similar to egg, hence we going to boil the water till its reduced and becomes a bit smily.

  6. Now keep this aside for an hour.

  7. This can be then used as a substitute for any of the egg dishes and you can easily freeze it. [ 3 tbsp of Aquafaba = 1 Egg white]

To Prepare Mousse

  1. Take 3/4th cup of Aquafaba in a bowl and with a help of an electric mixer start whisking the Aquafaba.

  2. We need to whisk it till it reaches Stiff peak stage[ which means when we run the spatula through the mixture it remains on the spatula and doesn't fall down] Video link shared below

  3. This entire process will take roughly 15-20 Minutes , so do stop in between if you dont have a good quality mixer.

  4. Once it reaches stiff peak gently fold in the mango puree along with the cardamom powder and whisk it a bit more for few seconds.

  5. Now pour it a glass or bowl and freeze it for 1-3 hours or preferably overnight

  6. Lastly garnish it with some mango pieces or nuts





Excellent dessert for Vegetarian, Weightloss or a diabetic individual
