One Pot Spaghetti



I always love to cook something that is easy, quick and convenient as I have 2 boys below 10 years to handle. I also like to keep my food healthy and nutritious.


I found this recipe to be extremely comforting, super easy and tasty..!


I have used lentils in this, but you can substitute it with Chicken / Tofu / Cottage Cheese etc.


You can use Buckwheat/ Whole wheat / Quinoa spaghetti instead of the normal one... I had that available in the grocery store nearby to my place and because of the lockdown we are unable to go out much...so have to work with what you got... !


Feel free to recreate in your own way..!





Serves 4

Cooking time : 20 - 25 minutes

Ingredients

2-3 Cloves of Garlic

1 Medium Onion sliced

1 Tomato Chopped in cubes [ you can finely chop it as well]

1 carrot sliced

1/2 Green peppers roughly chopped in cubes

1/2 Yellow peppers roughly chopped in cubes

1/2 Red peppers roughly chopped in cubes

1 cup of soaked, boiled red lentils

1 cup of sliced mushrooms

1 cup of chopped spinach

60 gms of spaghetti

1 cup Milk [ Optional ] [ I add it because it gives a bit of creaminess]

1 tsp of Chilli powder

1 tsp of Garam masala powder

1 tsp of pasta mix / oregano mix

1 tsp of salt

1 tsp of oil

1-2 cups of water

Coriander to garnish



Method


1. Heat a Sauce pan, add 1 tsp of Oil.

2. Once hot add garlic and sautee till slightly brown, then add onions and sautee till soft.

3. Then add tomato and sautee till its soft.

4. Add the carrots, followed by peppers, again sautee for 5 minutes

5. After 5 minutes add soaked boiled lentils and give a nice stir.

6. Add the Chilli powder, garam masala powder, salt and give it a nice mix.

7. Add 1 cup of water, and gentle place the spaghetti over the pan, it will soften and gently mix with the rest of the mixture.

8. Add the pasta mix from the top along with milk and let it simmer for 10 minutes.

9. Once the pasta has softened , add mushrooms.

10. Cover it and let it cook for 5 minutes.

11. Once the pasta is cooked , that is its al dente add the chopped spinach from top and gently give it a stir.

12 Let it cook for 5 minutes and its ready to eat...!

13. Lastly while serving garnish with coriander.


Note you can add more water as per the consistency you want.
