Pumpkin Salad




Serves 2


Ingredients

1 cup of Pumpkin [ Chopped in cubes ]

1/2 cup onions [ sliced ]

1/2 cup Tomatoes [ sliced ]

1 /2 cucumber [ cut in halves ]

2-4 dates [ finely chopped]

1/2 cup of chickpeas [ boiled ]

1 tsp oil

1 tsp of Salt

1 tsp of chilli flakes


For Pesto

1/2 cup of coriander / cilantro

2-4 dates

2 cloves of garlic

1 chilli

3-5 almonds

1 tsp of oil

1 tsp of lime juice



Method

  1. Heat a pan, add 1 tsp of oil add the pumpkin, add salt and chilli flakes and roast till its golden brown from either sides or cooked through.

  2. In a blender add all the pesto ingredients and make it into a fine paste.

  3. In a bowl add the cucumber, onions, and tomatoes along with chickpeas and pumpkin.

  4. Top it up with dates & pesto mix and finally garnish with some coriander


This Salad is a meal in itself and hence can be had as a Lunch or Dinner
