Puran Mousse




Serves - 4

Ingredients

Puran [ Gram Dal Puree with Jaggery ] – 1 cup

Whipped cream – 1 ½ cup 

Yogurt – ½ cup 

Somosa sheets – 4-5 no

Desiccated coconut – ½ cup 

Almond flour – ¼ th cup 

Raisins – ½ cup 

Cardemom powder – 1 TSP 

Nut meg – 1 TSP 






Method 

  1. On a flat surface place the samosa strips and with a circular cutter cut them and place them on a baking tray. Bake then for 10-15 minutes at 200 degrees or till they are crisp and golden brown 

  2. Mix half amount of whipped cream with puran, gently fold the mixture till smooth and creamy. Add nutmeg from top. 

  3. Beat remaining mixture of whipped cream with yogurt and cardemom powder and keep it aside 

  4. Now fill both the mixtures in piping bags and keep them ready for plating.

  5. To plate up take circular glass crush the crisps at the bottom , top it up with whipped cream and yogurt, followed by crisp and then puran mixture continue the process till the glass fills up and lastly top it up with desiccated coconut, almond flour and raisins 


Note

Puran [ Gram dal puree ] can be prepared by soaking 1/2 cup dal for 2 hours, post that cooking it in a pressure cooker for 2-3 whistles with less water or in a vessel till the the dal is cooked. Once the Dal is cooked add 1/2 cup of Jaggery and let it melt , then blitzs the mixture to form a smooth paste
