Quinoa Upma

Ingredients

Quinoa - 1 cup [ cooked ]

Onions - 1 cup

Tomatoes - ½ -1 cup

Capsicum - ½ cup

Mustard Seeds - 1 Tsp

Jeera - 1 Tsp

Hing - ½ tsp [ Asafoetida ]

Curry leaves - 3-5 no

Chilli powder - 1 Tsp

Turmeric - ½ Tsp

Salt - 1 Tsp

Oil - 1 Tsp

Coriander to garnish


Method

  1. In a Kadhai / pan add oil , once hot add the mustard seeds, jeera and curry leaves and cook till few seconds till you hear a splatter. Then add in the onions and cook for 5 minutes

  2. Add hing and cook for another 5 minutes.

  3. Add Tomatoes followed by chilli powder, turmeric and salt and cook till its nicely mashed and oil leaves from the side.

  4. Now add cooked quinoa and mix well

  5. Cook for another 2-3 minutes

  6. Finally garnish with coriander

  7. Serve Warm
