Veggie Burrito

Yummy Scrumptious and absolutely healthy

... My take on healthier version of a burrito ..!

Serves - 4


Ingredients


Roti / tortilla - 4 no

Julienne Carrots - 1 cup

Julienne Capsicum - 1 cup

Julienne Cabbage - 1 cup

Tomatoes Quarter sliced - 1 cup

Salsa - 1/4th cup

Hummus - 1/2 cup

Rajma moong / Kidney bean mixture - 1 cup [ you can just boil and use or sautéed it with garlic ginger onions tomatoes but keep it dry, we don’t want to make the tortilla soggy ]


Method


  1. Place the roti on a flat surface, spread the hummus on the roti

  2. Then spread salsa over it.

  3. Start placing the vegetables one by one , then place the rajma on the top.

  4. You can again add salsa from the top

  5. And roll the roti and you can either have it just as it is or your could toast it on the pan

Remember you can make these freeze wrapped in butter paper or container and just remove and toast on the pan or in the oven.


Julienne means - a portion of food cut into short thin strips
