Veggie Spinach Quinoa with Cottage Cheese

Serves 2
Ingredients
1 cup of Quinoa
1 cup of Spinach
2 Cloves of Garlic
1 medium Onion
1/2 Red Pepper roughly chopped
1/2 Yellow Pepper roughly chopped
1/2 Green Pepper roughly chopped
2 tsp of chilli powder
2 tsp of Oregano
2 tsp of Salt
1 cup of Cottage cheese [ Roughly palm size ]
2 tsp of Oil
1 tsp of Butter
Coriander / parsley to garnish
Method
1. Cook Quinoa as per Packet instructions or same way as you cook rice. You can season with salt while cooking if need it be.
2. Heat a pan add 1 tsp of Oil and 1 tsp of butter.
3. Add finely chopped Garlic, sautee for 1-2 minutes and then add 1 medium Onion finely chopped, sautee for another 2-3 minutes till translucent
4. Then add the Peppers and sautee for another 5 minutes
5. While that's cooking take the cottage cheese and marinate it with Chilli powder , oregano and Salt. Rub it evenly on both sides.

6. Once the peppers are little soft add cooked Quinoa, add salt, chilli powder and oregano
7. In the mean time heat oil in another pan and spread it evenly over the pan and add the marinated cottage cheese , cook till golden brown from each side.
8. Once the quinoa is done plate it up and then top it up with cottage cheese.
9. Garnish with Coriander or Sliced Carrots.
