Zucchini Protein Pockets




(Healthy low calorie, medium protein & High Fibre recipe )


Serves : 5 

Ingredients 

Zucchini strips -30-40 no 

White sauce - 1 cup 

Tomato puree with basil - 1 cup 

Soya granules - 1/2 cup 

Paneer - 1/2 cup 

Onions - 1/2 cup chopped finely

Tomatoes - 1/2 cup chopped finely

Garlic - 3-5 cloves 

Chilli powder - 1 TSP 

Cheese - 2-4 Tbsps [ Grated ]

Salt to taste 

Oregano - 1/2 TSP 

Atta [ Wheat flour ] and sooji [ semolina] mixture - 1/2 cup 

Oil - 2 tsps

Chopped coriander to garnish 


Method 

1. Firstly lets prepare the filling. Add oil in a pan once hot add onions and garlic sautée them till lightly brown, add tomatoes and chilli powder and salt. Followed by that add Soya & Cottage Cheese [ Paneer ], sauté for 5 minutes till the entire mixture comes together.

2. Take the zucchini  strips and place two strips horizontal and two strips vertical in a cross pattern and then place the filling in the centre and slowly wrap the pockets by folding each side on top of each other.

3. Heat a non stick pan, slightly cover the pockets in the atta [ Wheat Flour] and sooji [ semolina ] mixture and place them on the pan . 

4. Let them cool on each side till slight brown golden in color 

5. Once the pockets are cooked lower the heat, top them up with white sauce followed by tomato puree, cheese, salt and oregano. 

6. Cover the pan for 2 min to let the cheese melt 

7. Once done can be served with salad by the side


Note :


Preparation of Tomato Puree

  1. In a vessel blanch the tomatoes, once done puree in a blender.

  2. Transfer it in a pan along with Oregano powder, chilli flakes and salt.

  3. Cook for 5-10 minutes till the mixture leaves oil

  4. Now you can use this in pasta, pizza or Lasagna


Preparation of White Sauce


1. Heat a pot add 1tbsps of Butter, once melted add 4 tbsps of Wheatflour , roast for 5 minutes till it turns brown

2. Then add milk and keep mixing to avoid lumps of any kind.

3. cook till a smooth consistency is achieved.
